How to make great pizza sauce

Last year I posted a how-to of sorts for the dough, but in my negligence have yet to follow up with the sauce recipe.

There isn’t a secret to pizza and pasta sauce. It really is dead simple to make and requires very few ingredients. The right ingredients however are important. So if you leave with just one takeaway from this blog post, let it be this: use plum tomatoes. Only plum tomatoes will do and nothing else is acceptable, especially if you’re using canned tomatoes. So on to the recipe:

  1. Pour 28oz can of peeled plum tomatoes into a larg-ish bowl. Squeeze the tomatoes with your hands to crush. Careful if you’re wearing white as you’ll get some squirters
  2. Pour olive oil into a pan large enough to fit your bowl of tomatoes and heat over med-high heat
  3. Saute onion and garlic for a minute or two
  4. Pour bowl of tomatoes into the pan and turn down heat to med-low
  5. Add honey/sugar and stir
  6. Let that slowly bubble and reduce until it thickens up and looks like pasta sauce (20-25 minutes)

That’s it! No magic, just a bit of time and mess required. Once you get the hang of the sauce try making it with fresh peeled plum tomatoes from your local market. Fresh tomatoes offer an unsurprisingly fresh taste to both your pizza and pastas.
